Palma Ristorante is seeking an experienced, polished, and highly motivated Fine Dining Floor Manager to join our management team.
This is a hands-on leadership position. We are looking for someone who understands that a great Floor Manager does not manage from the sidelines. You are expected to be present on the floor, supporting the team, interacting with guests, maintaining standards, and controlling the flow of service from beginning to end.
Key Responsibilities
- Lead and actively manage the dining room during service.
- Conduct pre-shift meetings and communicate daily priorities, VIPs, special occasions, menu changes, and service expectations.
- Maintain exceptional fine-dining service standards throughout every shift.
- Continuously monitor the dining room and anticipate guest needs before they become requests.
- Visit tables, build relationships with guests, and ensure complete guest satisfaction.
- Recognize VIPs, regular guests, and special occasions.
- Work closely with the Maître d’ to control seating and properly pace the dining room.
- Coordinate with servers, bussers, bartenders, the kitchen, and management throughout service.
- Monitor ticket times, food delivery, table maintenance, beverage service, and overall service progression.
- Ensure servers are knowledgeable about the menu, ingredients, specials, cocktails, and wine program.
- Coach and develop employees in real time while maintaining professionalism.
- Handle guest concerns immediately, professionally, and discreetly.
- Ensure tables are properly set and reset according to restaurant standards.
- Maintain cleanliness, organization, and presentation throughout the dining room.
- Ensure opening and closing procedures are completed correctly.
- Help manage staffing, sections, breaks, side work, and employee performance.
- Maintain accountability while creating a positive and professional team environment.
- Work closely with the General Manager and ownership to continually improve operations and the overall guest experience.
The Ideal Candidate
- Has previous management experience in an upscale or fine-dining restaurant.
- Understands the sequence, pacing, and timing of fine-dining service.
- Has excellent leadership and communication skills.
- Has strong food, wine, cocktail, and hospitality knowledge.
- Is comfortable managing high-volume service while maintaining elevated standards.
- Has exceptional attention to detail.
- Maintains a polished and professional appearance.
- Is calm, confident, and solution-oriented under pressure.
- Knows how to coach and develop employees while maintaining a positive work environment.
- Leads by example and is willing to step in wherever needed.
- Understands that exceptional hospitality and strong operations must work together.

You should be able to walk into the dining room and immediately recognize what needs attention—whether it is a guest waiting too long, an empty glass, an improperly set table, food waiting to be delivered, a server who needs assistance, or a VIP who deserves additional attention.
You should know your guests, know your team, understand the kitchen, and always be thinking several steps ahead.
